There is a common misconception that chocolate and healthy eating belong on opposite sides of the table.
For most of my life in chocolate, I have enjoyed proving otherwise.
At Fantasie, chocolate has never been just about indulgence. It has also been about balance, creativity and discovering ways to make something delicious while still being mindful of what we put into our bodies. Long before “healthy snacking” became fashionable, I found myself experimenting with ingredients that could bring together taste, texture and nutrition in a way that felt natural rather than restrictive.
These Health Logs are one such creation.
Rich dark chocolate forms the base, while muesli and roasted almonds add crunch, substance and a wholesome character that makes them equally suitable as a snack with tea, a post-workout treat or a little afternoon pick-me-up.
What I particularly love about this recipe is its simplicity. There is no complicated baking, no elaborate preparation and no special equipment beyond a little patience and good-quality ingredients. The result is something elegant enough to serve guests, yet easy enough to make at home.
Like many of the best recipes, it reflects a simple philosophy — good food should bring pleasure, but it can nourish at the same time.
These Health Logs are proof that chocolate can do both beautifully.
Makes: 20–22 logs (approximately ½ kg)
Preparation Time: About 1 hour
Ingredients
- 300 gm 80% dark chocolate
- 150 gm muesli
- 25 gm roasted almond slices
Optional Additions
- Pumpkin seeds
- Sunflower seeds
- Flax seeds
Method
- Melt the dark chocolate using a double boiler.
- Temper the chocolate and transfer it to a mixing bowl.
- Add the muesli and roasted almond slices.
- Gently fold everything together using a spatula until evenly combined.
- Pour the mixture into a small deep tray.
- Smooth the surface with a spatula.
- Refrigerate for approximately 25 minutes or until firm.
- Remove from the refrigerator and cut into log-shaped bars.
- Arrange on a serving platter and serve.
Serving Suggestion
These pair wonderfully with tea or coffee and also make an excellent grab-and-go snack during a busy day.
