Chocolate is usually associated with comfort, sweetness, and indulgence. Chillies, on the other hand, bring warmth, excitement, and just a hint of adventure.

Putting the two together may seem unexpected, but that’s exactly what makes this recipe so memorable.

When I came across this recipe from Ms. Zeba Kohli’s collection, it immediately stood out. It isn’t just another moulded chocolate – it’s an invitation to step outside the familiar and discover how beautifully contrasting flavours can complement one another.

The rich bitterness of dark chocolate meets the gentle warmth of fresh green chilli, creating a flavour that surprises you with every bite. It’s not about making the chocolates fiery; it’s about adding just enough heat to make the chocolate linger a little longer on your palate.

Hot Chilli Chocolates

Makes: Approximately 500 g
Preparation Time: 1 hour

Ingredients

  • 50 g fresh cream
  • 450 g dark chocolate
  • 2–3 drops fresh green chilli juice
  • Green food colouring
  • 25 g white chocolate
  • A few fresh green chillies, for garnish

Method

  1. Bring the fresh cream to a gentle boil and allow it to cool slightly.
  2. Add 150 g melted dark chocolate to the cream and stir until smooth.
  3. Add 2–3 drops of fresh green chilli juice and mix well. Allow the filling to cool.
  4. Melt the white chocolate and add a few drops of green food colouring. Using a confectionery brush, lightly paint the inside of the chocolate moulds to create a green-shaded effect. Allow the coating to set.
  5. Melt and temper the remaining 300 g dark chocolate.
  6. Fill each mould completely with the tempered chocolate, then immediately invert the mould to allow the excess chocolate to drain out, creating hollow shells. Collect the excess chocolate for sealing later.
  7. Refrigerate the moulds for 15–20 minutes until the shells are firm.
  8. Fill each chocolate shell with the prepared chilli chocolate mixture.
  9. Seal the chocolates with the remaining tempered dark chocolate and smooth the surface.
  10. Refrigerate for another 20 minutes until completely set.
  11. Carefully unmould the chocolates by gently tapping the moulds.

Serving Suggestion

Arrange the chocolates on a serving platter and garnish with a few fresh green chillies for a striking presentation. These chocolates make an elegant homemade gift or a delightful after-dinner treat for those who enjoy unexpected flavour combinations.
